Nat Pyper, Pão de Queijo
my mom made this for us growing up
i associate it with brazilian dinners and the ubiquitous corner bakeries in rio de janeiro
pão de queijo (cheese bread ;-P)
12-ish pieces
okay here’s what you need
- 1/4 cup of canola oil
- 1/4 cup of water
- some salt ~ up to a teaspoon
- 1 cup of tapioca flour
- 1 egg
- 1/3 cup of greek yogurt (g.y.) ~ sour cream is fine but i like the consistency of g.y.
- 3/4 cup of grated parmesan
- spam or butter or oil for greasing the pan

- a mixing bowl
- a saucepan
- a whisking tool ~ i like using a potato masher, the kind that looks like a wavelength
- a cupcake cooking pan ~ ideally 2” diameter cups
- a burner
- an oven
now we’re ready to bake :-0
- preheat the oven to 450° ~ we’ll reduce the temp later
- put water, oil, and salt in a saucepan and bring to a boil (scary!! but safe) ~ i usually cover with a lid in case of splashing and keep the lid on until i’ve turned off the burner
- add the tapioca flour to the bowl while the mixture is heating
- once the mixture is boiling, turn off the burner, let it settle for a couple seconds, then pour onto the tapioca flour; mix thoroughly
- add the egg, g.y., and cheese; mix thoroughly
- what is the texture like? it should be viscous and stick to itself; add more g.y. or cheese as necessary until you have the desired consistency
- prime the pan ~ i usually spray one cupcake cup with spam, then use a paper towel it to dab up the excess oil and spread it to the other cups
- put a spoonful of the batter into each cup ~ leave a little room between the top of the batter and the top of each cup
- put the pan into the oven and reduce to 350°
- bake for 25-30 minutes ~ basically until it’s golden on top, but not too crunchy! the final consistency of the bread should be elastic and chewy but not gooey
