Sam Baldwin, Flapjack

Flapjack is a traditional British tray bake made with oats, syrup, butter and sugar. Enjoy with a cup of tea on a lazy afternoon, or as a sugar-loaded snack on a long walk or bicycle ride.

  1. Pre-heat the oven to 375°F.
  2. Lightly grease an 8 × 8 inch baking tray with butter and line with parchment paper.
  3. In a saucepan, melt the butter over a low heat, then add the sugar. Once the sugar is mostly dissolved, stir in the golden syrup and remove from the heat.
  4. Add half of the oats to the saucepan and mix thoroughly. Repeat with the rest of the oats.
  5. Tip the mix into the tray, making sure to push it fully into the corners, and roughly level it with the back of a wooden spoon.
  6. Bake for 15 minutes, or until the edges are golden brown.
  7. Leave to cool completely in the tray, then cut into small squares.
