Dan Brewster, Dense Microwaved Cheese Melt

This was a staple dish for me between the ages of 14 and 22. My range has since expanded a bit, but it’s still one of the only recipes I can think of that feels wholly mine.

Procedure

  1. Thaw frozen meatballs in microwave according to package directions. Cut in half and set aside.
  2. Thaw frozen peas by microwaving for 30–45 seconds
  3. Assemble the sandwich. Cheese should be the bottom layer, followed by peas, followed by meatballs (cut side down). Top with mustard to taste.
  4. Once assembled, flip the sandwich over so that the cheese will flow into the other ingredients as it melts.
  5. Microwave the sandwich for 30–45 seconds — long enough that the cheese begins to melt, but not so long that it becomes liquid and runs out.
  6. Serve. The sandwich will be soggy — you may have to wait a few minutes for it to cool and solidify.
