Caspar Lam, Goji Berry Pork

  1. Stir together white pepper, five-spice power, sugar, soy sauce, wine, and goji berries. Add sesame oil to taste.
  2. Heat olive oil in an enameled cast-iron dutch oven and sear pork until brown on both sides.
  3. When pork is half-way done searing, add garlic and ginger to the pot.
  4. When pork is almost done searing, add star anise and goji berry mixture.
  5. Cook for a few minutes and add enough boiling water to just cover the pork.
  6. Cook on high for 30 minutes lid on, checking periodically.
  7. Reduce flame and cook until pork is tender and sauce is reduced. Continue using the lid but make sure to check frequently. Make sure there is always enough liquid in the pot and to not burn the sauce.
  8. When finished, remove the garlic skins. Serve with white rice.
