  1. Cut up 1/2 cup unsalted butter and mix with 1/4 powdered sugar and 1 cup flour. Mix like a pie crust with minimum handling. Press into 8 inch square pan and bake until golden brown in 350 degree oven about 30 minutes.
  2. Beat 2 eggs with a cup of sugar until well combined. Add 2 tablespoons lemon juice plus zest of one lemon or more. Fold in 2 tablespoons of flour, 1/4 teaspoons of salt, and 1/2 teaspoon of baking powder. Spread on top of crust and bake until set, about 25 minutes. Dust with powdered sugar and cut into squares.
