A recipe my mom used to make at easter that I have recently picked up the tradition. everything tastes better when shaped like a cute animal… you kinda really need the photo of the bunny shapes to know how to make it though. my copy of the recipe has been photocopied several times — and is wrinkled from water, eggs, oil…
Makes 24–30
Ingredients
- 1 package dry yeast (1 3/4 TB dry yeast)
- 1/4 c water
- 1 c milk, scalded
- 1/3 c sugar
- 1/2 c shortening
- 1 tsp. salt
- 5–5 1/2 c sifted flour
- 2 beaten eggs
- 1/4 c orange juice
- 2 TB grated orange peel
- 1 tsp. cardomom
- Sugar glaze (2c confectioners sugar, add 1/4 c hot water and 1 tsp. butter)
Directions
- Soften yeast in water
- Combine next 4 ingredients (milk, sugar, shortening, salt)
- Stir in 2 c flour — beat
- Add eggs
- Stir in yeast
- Add in O.J. and peel and rest of flour to make soft dough
- Let rise 2 hours
- Punch down, let rest for 10 min.
- To shape, roll dough into rectangle 1/2” thick
- Cut strips 1/2” wide and roll between hands till smooth. See attached image for details.
- Let rise 45–60 min.
- Bake at 375 12–15 min.
